Baked Salmon with Mushrooms & Spinach Over Rice

During one of our recent shopping trips, Alex picked up a bag of Wegman's frozen Wild Rice Blend, wanting to have it as a side dish with salmon.  When we made our grilled salmon the other night, he made sure I didn't use too much salmon because he was still determined to make it with the rice.  So make it we did.
We wrapped the salmon, minced garlic, chopped onion, baby bella mushrooms and some fresh spinach, all seasoned with salt & pepper, in aluminum foil and popped it in the oven at 400ºF for about 20 minutes.

While the salmon was baking, I sautéed the rice and seasoned it with salt (it was pretty bland in that respect).  We then unwrapped the salmon, laid it over the rice, and dug in!  All of these flavors were awesome together.
